Recipe for Beauty Wok

I’ve talked a lot about how important my diet and exercise is. It makes me able to run at the pace I need for work. I’m usually comfortable with my quick work pace and that’s when I’m at my best. I thought I’d inspire you with a few recipes we eat at home because many of you are asking for it. I shared a recipe for Matilda’s beetroot patties a few days ago. Matilda is my chef and she works for me when I have the kids. It’s such a luxury to come home with the kids and have dinner ready.

When I decided to hire a chef it was important to make sure the kids can try different things and learn to eat different vegetables, beans and everything you can imagine. It’s easy to get stuck in a repetitive food pattern with what you like, and then sausage and macaronis is a constant favourite. When we’re abroad I hope they feel like they’re able to order new things to avoid arguments when we are having food. What do you do to make sure the kids have a varied diet? Vegetables are difficult but also important to make sure they eat correctly. I’ve found my favourites and I read up on what I need to often and I usually don’t have the same dinner as the kids.

Here is the recipe for a dish we’re calling Beauty Wok! A green wok full of anti-oxidants, omega 3 and Vitamin 2 for two people. It’s incredibly delicious!

1 pkt sugar snaps
1 pot Coriander (Chopped)
1 avocado
1 broccoli
1 pkt spinach
1 pkt frozen edamame beans without shells
2 msk sesame oil
1 tsk soy sauce
1 lime
½ dl crisp corn
6 walnuts
4 almonds
black sesame seeds
1 table spoon olive oil

Chop broccoli into small bouquets. Fry the broccoli and sugar snaps in olive oil. Mix in the edamame beans. Cool it down and mix in spinach with chopped coriander. Pour in the sesame oil, soy sauce and press the lime. Mix all the veg. Chop the corn, walnuts and the almonds, pour it over along with the sesame seeds. Cut the avocado into thin slices.
